High GI foods rapidly effect blood sugar, while low GI foods have a slow digestion and absorption and produce a more gradual rise in blood sugar. The noodles come out a bit flatter shaped - more like fettuccine than spaghetti, but both the "thick" setting and "thin" setting work great. For those of us who count calories, Ezekiel is twice the calories.
